Cornbread – Gluten Soy Nightshade Free

Ingredients:
2 Cups of Gluten Free Cornmeal
1 Teaspoon of Salt
1 Teaspoon of Baking Soda
2 Teaspoons of Gluten Free Baking Soda
1 egg, beaten
4 Tablespoons of butter, melted
1 1/2 Cups of Natural Yoghurt
4 Tablespoons of Honey

Preheat oven to 180 Degrees Celsius. Spray a large baking pan with oil and place into oven to warm it while oven is pre-heating (this creates a gorgeous crust on the edges).
In a large bowl, whisk the cornmeal, salt, baking soda and baking powder. Whisk until well combined.
In a separate bowl, whisk the egg, butter, yoghurt and honey.
Create a well in the dry ingredients and pour in the wet ingredients. Mix until just combined.
Pour into the heated baking pan.
Bake for 20 – 20 minutes or until lightly golden brown.

Enjoy hot or cold.
